Culinaria Spain is an excellent cookbook that reads more like a cultural analysis. There are many recipes for classic dishes and the recipes are uniformly excellent. The real strength of this book, however, is not the recipes but the cultural background and culinary specialties described in exhaustive detail. There are step-by-step directions and beautiful, full color photographs on every page.
